COOL VEGGIE, PINEAPPLE AND AVOCADO SMOOTHIE

Nutrition Facts

Pineapple, cucumber, spinach, ginger and coconut water make up this cool avocado smoothie that can be used as a post exercise drink or anytime meal replacement. This balanced smoothie contains all three macronutrients (carbs, fat, and protein) and can be used to help reduce visceral fat, lose weight, and fight insulin resistance (Prediabetes). Providing an excellent source of dietary fiber (25% DV),protein (22% DV), folate (20% DV), vitamin B5  and B6 (20% DV), vitamin C (60% DV) and potassium (15% DV).

1 cup 100% original coconut water 1 cup fresh or frozen pineapple pieces 1/2 cup cucumber slices 1-inch x ¼-inch ginger slice, peeled2 cups baby spinach leaves 1/2 ripe, Fresh California Avocado, seeded, peeled, and cubed1 scoop vanilla protein powder** (whey, soy, pea, or rice)
  1. Pour the coconut water in a blender, then add the rest of the ingredients.
  2. Blend until smooth.

Serving Suggestion: Eat for a breakfast, lunch or dinner meal replacement.

**Note: To provide 20 grams of protein.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
